What is Matcha?

Matcha is ground green tea in its purest form. Unlike traditional green tea, where the leaves are simply steeped in water, in matcha the entire tea leaf is finely ground and consumed. This means that matcha contains more secondary plant compounds that contribute to its intense flavor and natural green color.

Origin and quality – Uji, Japan

Matcha Ceremonial Grade is grown in the Uji region of Kyoto, Japan —one of the most famous and renowned matcha regions in the world. The soil is nutrient-rich and the water is pure, giving the matcha its special quality. The leaves are hand-picked and carefully processed to ensure the highest quality.

Cultivation and processing:

  • Harvest: 1st Harvest (Ichibancha) – Early leaves from the first harvest in May 2024

  • Steaming: Short (approx. 20 seconds) to preserve freshness and natural taste

  • Shade: Full shade up to 32 days before harvest to promote the intensity of the umami flavor

  • Grinding: Traditional granite stone mill in Uji (30 g Matcha per hour)

In contrast, our Traditional Matcha combines the 1st and 2nd harvests, giving it a richer, more bitter flavor —perfect for those who like it more intense.

Matcha – Delicious and easy to prepare

Enjoy the traditional preparation of matcha in just a few simple steps! Here's how to prepare your matcha tea easily and with a perfect foam:

Preparation steps:

  1. Dosing Matcha
    Put a level teaspoon of matcha (about 2 chasaku bamboo spoons) into a matcha bowl (chawan).

  2. Add water
    Add about 30 ml of warm water (ideally at 70-80°C).

  3. Stir for the perfect foam
    Use a matcha whisk (chasen) to whisk the matcha in Z-shaped motions until it reaches a creamy consistency.

  4. Fill with milk
    Now pour in the frothed milk of your choice and enjoy your freshly prepared matcha!

Tip:

For an even more intense flavor experience, you can also try the matcha in combination with plant-based milk such as oat or almond milk!
